Kaachari is wild variety of cucumber. Kachari powder is made from Dark greenish-yellow melon which grows in the desert areas of Rajasthan. It has nice tangy taste and is used in preparing pickle and chutney. This signature spice is a culinary bliss for many veg and non veg dishes. Kachar Maas (Meat with Kachari) and kachari ki chutney (a tart condiment) are trademark dishes.The combination of red chilli, garlic, kachari powder and other spices makes kachari ki chutney. This is a tempting spicy spread for sandwiches and can also be consumed along with paratha, rice, idli and dosa. Traditionally it is used in sprouts, Sangari ki subzi, gavarfali ki subzi, raddish vegetable and many more.
