Kashmiris and other peoples of the Himalayan regions, and indeed, mountain regaions worldwide, dry their produce to sustain themselves through the harsh winters. These include sun-dried Bottle-gourd, Aubergines, River Fish that look like Sardines, Apples and Dried-tomatoes. Unlike in European contries, these are not preserved in oil or salt but simply, dried in the sun and preversed by the winter months. These Sun-dried Brinjals or aubergines or egg-plants, as they are known in different parts of the world, are also one such human innovation based upon necessity.Sun dried Kashmiri Dried Brinjals are made from good quality brinjals without added colors or preservatives.
